L'Atelier runs small-group Moroccan cooking classes inside a riad kitchen in Essaouira's medina. Classes are capped at around 8 participants and last approximately 3 hours, starting with a guided walk through the medina spice souks to select ingredients before returning to the kitchen to cook. You typically prepare two to three dishes - most sessions include a tagine, a selection of Moroccan cold salads, and either pastilla or msemen flatbread. Instruction is hands-on throughout; you do not watch a demonstration and then taste at the end, you cook everything yourself with guidance. The session finishes by eating what you have made, and the recipes are sent to you afterwards. The class is conducted in English and French. Essaouira's Atlantic climate means the kitchen stays cool even in summer, which makes the experience comfortable year-round. Dietary preferences including vegetarian can be accommodated with advance notice. This is an accessible class for complete beginners - no prior cooking experience is expected. It suits solo travellers and couples as well as small groups, and works particularly well as a morning activity before an afternoon exploring the port or ramparts.
